I tried the Cow Opening as black. I didn't feel I was worse in the opening stage. But according to the engine position was +2 after ı reached the setup😆I managed to win the game but ı was playing kinda passively. My Both knights ended up being stuck on the 7th and 8th rank😁And all the game was about these knights.
I think The Cow Opening isn't that bad. I mean yes you are getting worse positions but at least the position is playable and you generally have a plan. Because of the knights 😅
Also developing bishops might be a little bit hard. But ok.
Ehmm Unfortunately ı will not continue playing the Cow because ı like my openings 😛
By the way, ı'm playing on Lichess and my blitz rating is 2200. You should create your "cow tree" All the lines of the cow opening. I wonder what your mom and dad think about the opening.✌

Played some games with the Cow, it's a fun opening, though it does require a lot of paying attention for aggressive queens.

Well now.. you can have a whole barnyard full of variations.. the goose variation for instance.. and the pig variation.. and of course you need a rooster variation.. A sheep variation.. and a goat variation.. a horse variation and.. a hen variation.. hmm.. yeah there's a ton more.
You get the idea.
The cow is an excellent opening, as you say.. not over extending and yet developing well, you can play a very effective responsive and flexible game. Any opening which is very unfamiliar to your opponent has intrinsic strengths, especially if that opening is as sound as your cow. MMmmarvelous !
