I'm a beginner so maybe this is wrong but at the beginning, why not queen to h3 then black pawn takes the knight. Finally the queen takes black rook on h8 and checkmate no?

last one was pretty easy, the castle one was interesting, I would have moved the rock, but not via castling.
First one is my favorite, because it's just for winning material, not winning the game, and just for winning material you don't usually think to make such big sacrifices.
