In the Dutch Defense Mate, e4 is very risky as they can just play Nf6, and your bishop is still trapped and you lose your bishop right after. So I recommend you play Bg3 instead, so you can save the bishop.

Scholars Mate can be prevented with over 10 different moves. However, it depends on how the queen wants to mate, (from H5 or from F3) For F3 there is pawn f6, and Knight H6 for both types of the mate. Knight F6 recommended for the F3 mate. H6 for the H5 mate, it defends the mating square.
